Ultimate Wild Rice

Amount Measure Ingredient -- Preparation Method

2 cups wild rice

2 quarts Vegetable Broth

(see separate recipe)

1/2 cup butter -- divided

1/4 cup finely chopped shallots

3 stalks celery -- finely chopped

3 tablespoons grated orange zest

1 cup chopped walnuts

1/4 cup sugar

salt and pepper to taste -- optional

 

Servings: 4-6

 

Wild rice has a wonderful earthy flavor and chewy texture.

Caramelized

walnuts and essence of orange transform this side dish into a

delicious treat.

 

Wash rice, drain and place in the slow cooker with broth. In a

saucepan on

medium-high heat, melt 1/4 cup of the butter and sauté shallots and

celery

until soft.

 

Transfer shallots and celery to slow cooker. Add orange zest. Cover

and

cook on high heat for 2 to 5 hours, or on low heat for 6 to 7 hours.

 

Caramelize nuts by melting remaining 1/4 cup butter in a skillet on

medium-high heat. Stir in walnuts and reduce heat to medium. Sprinkle

sugar over walnuts and stir until sugar has caramelized. Remove from

heat

as soon as nuts brown. Gently stir nuts into rice and serve

immediately.
