Guest guest Posted December 8, 2001 Report Share Posted December 8, 2001 Once more, substitute the butter with vegan margarine! cherrie * Exported from MasterCook * Ultimate Wild Rice Recipe By : The Vegetarian Slow Cooker by Joanna White, page 74 Serving Size : 4 Preparation Time :0:00 Categories : Grains And Cereals Side Dishes Slow Cooker Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups wild rice 2 quarts Vegetable Broth (see separate recipe) 1/2 cup butter -- divided 1/4 cup finely chopped shallots 3 stalks celery -- finely chopped 3 tablespoons grated orange zest 1 cup chopped walnuts 1/4 cup sugar salt and pepper to taste -- optional Servings: 4-6 Wild rice has a wonderful earthy flavor and chewy texture. Caramelized walnuts and essence of orange transform this side dish into a delicious treat. Wash rice, drain and place in the slow cooker with broth. In a saucepan on medium-high heat, melt 1/4 cup of the butter and sauté shallots and celery until soft. Transfer shallots and celery to slow cooker. Add orange zest. Cover and cook on high heat for 2 to 5 hours, or on low heat for 6 to 7 hours. Caramelize nuts by melting remaining 1/4 cup butter in a skillet on medium-high heat. Stir in walnuts and reduce heat to medium. Sprinkle sugar over walnuts and stir until sugar has caramelized. Remove from heat as soon as nuts brown.
