Guest guest Posted December 8, 2001 Report Share Posted December 8, 2001 i would, of course, substitute the butter with vegan margarine. *hugs* cherrie * Exported from MasterCook * Turnip And Onion Casserole Recipe By : The Vegetarian Slow Cooker by Joanna White, page 77 Serving Size : 6 Preparation Time :0:00 Categories : Side Dishes Slow Cooker Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 pounds turnips 1 1/2 cups Vegetable Broth -- page 48 1 tablespoon chopped onion 2 tablespoons chopped fresh parsley 3/4 cup applesauce 1/8 teaspoon pepper -- or to taste 1/4 cup butter -- melted, divided 1 cup dried breadcrumbs OR crushed croutons salt -- to taste Servings: 6 Double-cooking the turnips brings out their natural sweetness. Serve this dish with a colorful tossed salad or mixed steamed vegetables. Peel turnips, dice and place in the slow cooker with vegetable broth and onion. Cover and cook on low heat for 6 to 8 hours, or on high heat for 2 to 3 hours, until turnips are very tender. Mash turnip mixture until smooth. Add parsley, applesauce, pepper and 1/2 of the melted butter. Taste and add salt if desired. Return mixture to slow cooker. In a bowl, combine remaining butter and breadcrumbs.
