Cumin Rice With Nuts

Recipe By : The Vegetarian Slow Cooker by Joanna White, page 71

Serving Size : 4 Preparation Time :0:00

Categories : Rice Side Dishes

Slow Cooker

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

6 tablespoons butter -- divided

2 cups long-grain rice

1 3/4 teaspoons salt

4 teaspoons ground cumin

4 cups water

3/4 cup pine nuts or chopped almonds

Servings: 4-6

This very simple recipe goes well with bean dishes and vegetable

casseroles. Toasting the nuts enhances their flavor and helps prevent

them

from becoming soggy. If desired, add 1/2 cup dried currants or

raisins.

In a skillet on medium-high heat, melt 4 tablespoons of the butter

and add

rice, stirring until rice turns light brown. Transfer rice to the

slow

cooker with salt, cumin and water. Cover and cook on high heat for 2

to 3

hours, or on low heat for 9 hours.

Melt remaining 2 tablespoons butter in skillet on medium-high heat,

add

pine nuts and stir until browned. Stir into rice mixture and serve

immediately.
