Guest guest Posted January 5, 2002 Report Share Posted January 5, 2002 Hot Roasted Nuts Recipe By :The 150 Best Slow Cooker Recipes, Judith Finlayson Serving Size : 8 Preparation Time :0:00 Categories : 150 Best Slow Cooker Recipes Snacks Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- SALTY ALMONDS WITH THYME: 2 cups unblanched almonds 1/2 teaspoon white pepper 1 tablespoon fine sea salt -- or more to taste 2 tablespoons extra virgin olive oil 2 tablespoons fresh thyme leaves SPICY CASHEWS: 2 cups raw cashews 1 teaspoon chili powder 1/2 teaspoon cayenne pepper 1/4 teaspoon ground cinnamon 2 teaspoons fine sea salt 1 tablespoon extra virgin olive oil SALTY ALMONDS WITH THYME: In slow cooker stoneware, combine almonds and white pepper. Cover and cook on high for 1 1/2 hours, stirring every 30 minutes, until nuts are nicely browned. In a mixing bowl, combine salt, olive oil, and thyme. Add to hot almonds in stoneware and stir thoroughly to combine. Spoon mixture into a small serving bowl and serve hot or allow to cool. SPICY CASHEWS: In slow cooker stoneware, combine cashews, chili powder, cayenne, and cinnamon. Stir to combine thoroughly. Cover and cook on high for 1 1/2 hours, stirring every 30 minutes, until nuts are nicely toasted. In a small bowl, combine sea salt and olive oil. Add to nuts in slow cooker and stir to thoroughly combine. Transfer mixture to a serving bowl and serve hot or allow to cool. VARIATION: Sweet and Spicy Cashews: Substitute 1 tablespoon of butter for the olive oil and add along with 2 tablespoons of brown sugar.
