this looks really good. i'm very tempted to make it....hmmmm

 

 

 

MIXED BEAN CASSEROLE1/2 C. vegetable broth1 onion, chopped1 green bell pepper, chopped14-ounce package Gimme Lean Sausage2/3 C. ketchup1/3 C. red wine vinegar1 Tblsp. minced garlic1/4-1/2 C. brown sugar2 tsp. mustard powder3 bay leaves15-ounce can vegetarian fat-free baked beans15-ounce can white beans, drained and rinsed15-ounce can kidney beans, drained and rinsed15-ounce can black beans, drained and rinsed15-ounce can garbanzo beans, drained and rinsed15-ounce can pinto or red beans, drained and rinsedPlace broth, onion, and bell pepper in nonstick frying pan. Break up GimmeLean and add it to the pan. Cook, stirring frequently, until vegetablesare tender and sausage is cooked, 7-10 minutes. Add remaining ingredientsand mix well. Pour into large nonstick baking dish (or place inslow-cooker for rest of the day). Cover and cook at 325 degrees for 60minutes; uncover and cook for 30 more minutes. Makes 10-12 servings.
