Whole-Grain Cereal in a Crockpot

Amount Measure Ingredient -- Preparation Method

1/2 cup oatmeal -- (long cooking)

1/4 cup cornmeal

1/4 cup millet

1/4 cup rye flakes

1/4 cup barley

1/4 cup wheatberries

1/4 cup dried apricots -- (or to taste) sliced

1/4 cup dates -- sliced

4 cups water

 

In a crockpot, mix all ingredients together the night before. Use 1/4 cup each

of your favorite nuts, grains, or seeds, totaling approximately 2 cups. Add

your favorite dried fruit, using more or less, depending on the sweetness

desired.

 

Add water in a ratio of 2 to 1 with dried ingredients, i.e., 4 cups of water to

2 cups of dried ingredients.

 

Cook on low for 6-8 hours. For longer cooking time, add 1 more cup of water to

prevent cereal from being too dry. Add more or less water for consistency

desired.

 

Serve with milk or applesauce. Garnish with blueberries and slivered almonds or

your favorite fresh fruit.

 

Makes approximately 6-7 cups.
