Pecan Mushroom Wild Rice

2 tablespoons butter or margarine

1 onion -- finely chopped

8 ounces sliced mushrooms

1/2 cup chopped pecans or almonds

1 cup wild rice

2 cups vegetable stock

 

In a large skillet, melt butter over medium-high heat. Add onion,

mushrooms, and pecans. Saute for 7 to 8 minutes or until vegetables

are tender and nuts are fragrant. Add rice and cook for another 3

minutes. Transfer mixture to slow cooker and pour in stock.

 

Cover and cook on low for 6 to 8 hours or on high for 2 to 3 hours,

until most of the liquid has been absorbed. Fluff with a fork before

serving.
