Add onion, mushrooms, and pecans. Saute for 7 to 8 minutes or until vegetables are tender and nuts are fragrant. Add rice and cook for another 3 minutes. Transfer mixture to slow cooker and pour in stock. Cover and cook on low for 6 to 8 hours or on high for 2 to 3 hours, until most of the liquid has been absorbed. Fluff with a fork before serving.
