Dhal - (Spiced Lentils)

1 1/4 cups red lentils

2 cups boiling water

1 bay leaf

2 tablespoons oil

1 onion -- peeled and sliced

2 cloves garlic -- peeled and crushed

1 teaspoon tumeric

1 teaspoon coriander

1 teaspoon cumin

1/2 teaspoon ground ginger

1/2 teaspoon cinnamon

1 green pepper -- (optional)

 

Always sort through lentils on a flat surface (like a plate or upside

down pot lid) before placing in crockpot. Lentils are prone to

collect small stones during harvesting which can be very hard on the

teeth.

 

Wash and drain lentils and place in crockpot. Add bay leaf and

boiling water. Cover with lid and cook on high for about 2 - 2 1/2

hours on HIGH or until the lentils are tender and have absorbed all

the water. If there is a little water remaining, remove the lid for

15 minutes or so and stir occasionally. The water will evaporate.

About 20 minutes prior to serving, heat the oil in a fry pan and fry

the onion and garlic until soft. Add the tumeric, corriander, cumin

and ginger and continue to cook for a few minutes, stirring

frequently. Then add the green pepper. Stir to coat the pepper with

the spices and cook gently for 5 minutes. Stir the spice and

vegetable mixture into the lentils and season with salt and pepper.

Serves 4.
