Kosher Bean Soup

2 cups dried lima beans

8 cups cold water

1 large onion -- roughly chopped

1 carrot -- peeled and quartered

2 cloves garlic -- crushed

1 vegetable bouillon cube

2 tablespoons corn oil

1 medium onion -- finely diced

2 teaspoons kosher salt

pepper

 

Soak lima beans in cold water overnight. Drain the lima beans and rinse several

times to loosen shells. Place in crockpot with water, chopped onion, carrot,

bouillon and garlic. Cover and cook on Low 18-24 hours, until beans are very

tender. Remove cover and turn off heat to cool a little. In the meantime, heat

the oil in a skillet and saute the finely diced onion until browned. Ladle a

small bit of soup at a time into a blender or food processor until all soup is

pureed. Return to crockpot and stir in browned onions. Season with salt and

pepper to taste. Freezes well.

I am curious.... what exactly seperates this out as

" Kosher " ? Any vegan recipe is kosher so long as the

crockpos has not been used for trafe (non-kosher)

items in the past .. or meat (land or air animal)

preparation. With the latter, it will stimm be

kosher, but could only be served at a meat meal or a

non-dairy meal.

 

Maybe it's the use of " Kosher salt " that does the

trice ... or the tremendously high salt content

acquired between the bullion cube, the added salt and

the natural salt (the only one that is actually good

for you) in the beans. I might suggest the use of the

no added salt, all natural dehydrated vegie broths in

lieu of the bullion cube. Read the ingredient labels.

 

Even though there is not a lot of it, I personally

would substitute a healthier oil, such as virgin olive

or grapeseed oil. In my own crockpot, oil would not

be added as I am avoiding the " saturated oils " .

Cis-unsaturated fats become trans-unsaturated when

heated. trans acts the same in your blood as does the

saturated. I am told in the postings that " solar "

cooks at a much lower temp. I would be more favorable

to the use of oils that way than the higher temps ...

approximately 300dF is the " distruction point " for

cooked oils.
