TVP Veggie Soup

Amount Measure Ingredient -- Preparation Method

1/2 cup TVP chunks

2 cloves garlic -- minced

1 cup chopped onions

1 cup carrot chunks

5 teaspoons vegetable bouillon granules

1/4 cup converted rice

15 ounces tomatoes -- diced

3 1/2 cups water

2 cups pinto beans -- cooked

salt and pepper to taste

1/2 teaspoon dried basil

15 ounces cut green beans

1 cup okra -- chopped

 

Combine all ingredients in crockpot. Cover and cook on low for 6 hours.

out of curiousity, what exactly is "converted" rice? is it a quick cooking rice or something?

Do you get Uncle Ben's rice in the US? Here in Canada that is the most popular brand and it is "converted rice". It isn't like Minute Rice or anything. It is good and you can also get it in converted brown rice which cooks more quickly than regular brown rice (25min as opposed to 45min).

Textured Vegetable Protein

 

" TVP " is a trademark name of the product. I forget the patent company

(Archer McDaniels?)

 

From The Mail Order Catalog:

 

" What is it?

" Textured soy protein is a food product made from soybeans. It is produced

from soy flour after the soybean oil has been extracted, then cooked under

pressure, extruded, and dried. "

I've been buying it for years from these people

(http://www.healthy-eating.com) and it comes in a few different sizes,

shapes, and flavorings.

 

The granules resemble ground beef in texture when rehydrated. The strips,

chunks, and super-chunks look like Gravy Train dog food in the big bags.

They also sell bigger pieces that resemble chicken cutlets when rehydrated.

 

The flavor is difficult to describe, but this stuff *does* pick up the

flavor of whatever it's cooked in, and plain, unflavored varieties and be

made flavored by using broth instead of water when rehydrating. Flavored

varieties are also available, such as ham, chicken, and beef.

 

I prefer the unflavored, and buy both the granules (what recipes usually

call for) and super chunks, and toss both into stews, soups, and chili.

 

According to The Mail Order catalog, 1/4 cup of granules or 3/8 c unflavored

slices contain:

 

70 calories

13 g protein

0.25 g fat

4.5 g fiber

8 g carbohydrates
