Super Vegetarian Chili

Amount Measure Ingredient -- Preparation Method

1/2 cup dry red wine

1 cup chopped onions

1/2 cup finely chopped celery

1/4 cup finely diced green bell pepper

1 tablespoon minced garlic

2/3 cup diced canned green chiles

3 cups chopped canned tomatoes

3 cups canned pinto beans -- rinsed & drained

2 tablespoons chopped fresh cilantro

1 tablespoon chili powder

2 teaspoons ground cumin

2 teaspoons dried oregano

1 bay leaf

2 cups water

3 tablespoons tomato paste

salt to taste

 

In a large saucepan over medium-high heat, heat wine, onions, celery, bell

peppers, and garlic together for 8 to 10 minutes.

 

Transfer to the slow cooker. Add all other ingredients except salt. Stir to

combine. Cover and cook on law heat for 5 to 7 hours. Remove bay leaf before

serving. Taste and add salt if desired.
