Ingredients: 4 medium potatoes, scrubbed and chopped 1 head cauliflower, chopped 1 cup carrots (I used the shortcut carrots) 1 large onion, chopped 2 cloves of garlic, chopped 1 serrano chile, diced (optional) 1 can tomato soup (not condensed) 1 Tbsp. Garam Masala 1/2 Tbsp. Turmeric 1 Tbsp of unsalted butter or canola oil Dash of salt and pepper ***We were in a bit of a hurry to get things going because we were going away and wanted to eat in about 1 1/2 hours, so normally, you could probably throw all of the ingredients in the pot in the morning with some water and turn it on low all day. Below is what I did. Boil potatoes, cauliflower and carrots in water for about 8 minutes, until softened, but not mushy. Fry onions in butter or oil for a few minutes. Add garlic and chili pepper. If you want it hot, leave the seeds, if you don't want it hot, skip the pepper altogether. Add the garam masala and turmeric and stir. Add salt and pepper. Dump can of soup in the crock pot. Add onion mixture, then drained potato, cauliflower and carrot mixture. Mix until coated. Cook on high for 1-2 hours or on low for longer.
