Fruit and Nut Barley Cereal

The Vegetarian Slow Cooker

 

Amount Measure Ingredient -- Preparation Method

1 cup barley

2 quarts water

1 teaspoon salt

2 cups chopped dried mixed fruit

1 cup raisins

1/2 teaspoon ground coriander

1 cup almonds

 

Place barley, water, salt, mixed fruit, raisins, and coriander in the slow

cooker. Set on low heat and cook for 8 to 9 hours.

 

Toast almonds in a 350ºF oven for about 10 minutes, until nuts are lightly

browned. Chop nuts and stir them into cereal just before serving.
