Just ignore the nutritional info on this one -- it is *incorrect*. That's

because the recipes calls for making extra sesame salt -- all of which is not

included in this one recipe.

Hot Cereal with Sesame Salt (Gomashio)

Amount Measure Ingredient -- Preparation Method

1 3/4 cups steel-cut oats

5 cups water

2/3 cup sesame seeds

4 teaspoons salt

 

Stir oats and water together. Cover and cook on low heat for 8 hours.

 

Roast sesame seeds and salt in heavy skillet over medium heat for about 3

minutes, until seeds become a light golden brown.

 

Using a mortar and pestle or a small electric food grinder, coarsely grind

sesame seed mixture, but do not turn it into a powder. It should have a chewy

texture.

 

Sprinkle some on your cereal and keep the rest sealed in a glass jar (see Notes

section).

NOTES : Gomashio is ground toasted sesame seeds mixed with salt. The Japanese

like to use it on rice, but it tastes wonderful on all cooked grains. If you

use cereals other than oats, like muesli or alternate grains, follow package

directions on the amount of water needed.

 

The gomashio recipe will make more than is needed for this amount of cereal.

Store in a tightly covered container.
