Guest guest Posted October 1, 2002 Report Share Posted October 1, 2002 This one is easy and yummy. I made it yesterday and I thought I'd share it with all of you. I used orange lentils which are smaller than regular brown lentils and give the soup the nice orange color. They are a bit more expensive, but a nice change. You could use regular lentils too. Crock Pot Egyptian Lentil Soup 1 1/2 cups dry orange lentils (rinsed) 1 large onion, coarsely chopped 1 green pepper, coarsely chopped 2 tomatoes, coarsely chopped or 1 can of tomatoes, diced 4-5 cloves of garlic, chopped in half 1 veggie boullion cube 1/2 Tbsp ground cumin (or more if you love it like I do) 1 tsp chili powder (or more to taste) 5-6 cups of water 1 bayleaf Mix all ingredients in your crockpot and place on high for 2-3 hours or set it to low and let it simmer all day.
