OR 1 tbsp dried 1 tablespoon chopped fresh oregano -- or 1 tsp. dried 1 tablespoon sugar 1 teaspoon salt 1/2 teaspoon pepper Heat olive oil in a skillet on medium-high heat and saute onions for about 4 to 5 minutes until wilted. Add garlic and saute for 1 minute. Dice drained tomatoes (reserve drained juice to thin sauce if desired). Stir in tomatoes, onions, fresh herbs and spices, and simmer for 20 minutes. Taste and adjust seasonings. If you wish to use the slow cooker for this sauce, cook on low heat for 1 1/2 hours.
