Guest guest
Sue, I just got my first crockpot at Christmas and tried the Chickenless " Chicken " Stew recipe you posted last month and it was GREAT! I modified it a little though and thought I'd share. Instead of tofu, I used TVP chunks that were soaked in about 5 cups of seasoned liquid (water, 2 different types of soy sauce, garlic, onion, " oyster sauce " - a.k.a. mushroom sauce). I then used the liquid in the stew instead of plain water and increased the vinegar to 2 tablespoons of vinegar (I used balsamic). I cooked it on low in my crockpot for about 9 hours. I also made dumplings for them (basic dumplings: flour, water, vegan margarine, salt, baking powder) and put them in to cook for about 20 minutes before serving. It was so good and reminded me of the stew my mom made when I was growing up. Next time I'm going to use tofu. Do you have any particular kind of tofu you like to use (i.e., extra firm or firm)?
