OVERNIGHT OATMEAL

Overnight Oatmeal

 

1 cup steel cut oats

1 cup dried cranberries

1 cup dried figs

4 cups water

1/2 cup half-and-half

 

In a crock-pot, combine all ingredients and set

to low heat. Cover and let cook for 8 to 9 hours.

 

This works best if started before you go to bed.

This way your oatmeal will be finished by

morning.

How is this a vegan recipe if it calls for half and half?

I make Scottish Oatmeal on the stove top nearly

every day.

 

Here's how I make it:

 

4 cups water

1 cup steel-cut oats

 

Let soak overnight. Simmer for about 10 minutes.

[watch closely, it tends to bubble over - oh

what a mess] Let rest another 10 minutes. Serve

with fruit sweetened jam, or applesauce and

cinnimon.

 

I like the crockpot version because I rather

leave it - unattended.

 

It's vegan if you use SOY milk or SOY half/half.

I cut and pasted it from ezine just a moment ago

and forgot to revise the half/half part.

No. It is made from cow milk. You could sub coconut milk, a

thick almond milk, the Benton Sister's favorite milk (millet and cashew

and a huge hit around here) or some other thicker milk instead of the

half and half. You also might not need as much as the recipe calls

for.
