You can flavor up a pot of beans by adding a tart or acidic element after they've finished cooking. If you add the acidic element before the beans finish cooking, I'm told they don't soften up as well. Suggestions: a spoonful of balsamic or apple cider vinegar, plus fresh chopped herbs in lentil soup. a dab of tamarind concentrate in a curry or cumin-flavored dish. Tamarind concentrate is available at international or Indian markets. Add hot pepper flakes if you like spicy food. a squeeze of lemon, plus some fresh herbs (perhaps thyme) and some fresh black pepper for white beans or lima beans a can of canned/stewed tomatoes (you'd need the low sodium ones) for kidney or pinto beans That should get you started!
