Made lasagna out of that one. Does anyone have any crockpot recipes??? I've heard of a zucchini soup but cant find the recipe. Peace, Kim Creole Zucchini2 pounds zucchini1 small green pepper, chopped1 small onion, chopped1 clove garlic, minced1 Tsp salt1/4 each pepper4 each tomatoes, peeled and chopped2 Tbs butter2 Tbs minced parsleyCut zucchini into 1/4-inch slices. In your crockpot,combine zucchini with green pepper, onion, garlic, salt,and pepper. Top with chopped tomatoes, then butter.Cover and cook on high for about 2 hours or until tender.
