Stefado

This recipe is especially good for people who don't think they like

TVP.

It's also very quick to throw together.

In the morning, dump into a slow-cooker:

1 large onion, chopped

2 1/2 cups water

2 Tbsp. Bragg's liquid aminoes (or substitute 1 Tbsp soy

sauce)

1 tsp. salt

1/2 tsp. pepper

1 small can tomato paste

1/3 cup red wine (I've made it with white wine, too, when I

didn't have

red))

1 Tbsp. red wine vinegar

2 Tbsp. packed brown sugar or Sucanat

1/2 tsp. garlic powder

1 bay leaf

1 cinnamon stick (you can probably substitute a little

powdered cinnamon)

1/4 tsp. ground clove

1/4 tsp. ground cumin

2 Tbsp. raisins (or more)

Stir to blend; then add and stir in:

1 1/2 cups plain chunk TVP

Cook all day; serve over rice or as a thick stew. Don't eat the

bayleaf or

the cinnamon stick :^O
