Lentil-Spinach Stew 1 c. dry lentils 1 med onion 2 cloves of garlic 1 T vegetable oil 4 c. water 1 7 1/2 oz. cut up tomatoes 4 t. vegetable boullion granules 1 T worcestershire sauce 1/2 t. salt 1/2 t. thyme 1/4 t. fennel seel crushed 1/4 t. pepper 2 med. carrots chopped (1 cup) 1 10 oz package frozen spinach 1 T. balsamek vinegar Rince lentils; set aside In a large sauce pan r dutch oven cook onion and garlic until tender. Stir inlentils, water, tomatoe and veg boullion granules, worcestershire sauce, salt, pepper and bay leaf. Bring to a boil breaking up spinach with fork. Cover and simmer 20 min. Add carrots and frozen spinace. Bring to a boil breaking up spinace with a fork. Reduce heat heat. Cover and simmer about 15 minutes Stir in vinegar, discard bay leaf. 4 servings. I tend to just throw things in my crockpot to see if it will work, and haven't had bad luck yet! hehe....(also, just so you know, Worcestershire sauce is not vegetarian, it has anchovies; however, a vegetarian version can be bought at most health food stores, that tastes really great!)....Also I would suggest throwing in the spinach very last..... thanks!
