I went way back to the beginning of the messages and found a

vegetable casserole one for today while we were watching the

football.I also noticed an earlier message asking for us to post and

let everyone now if we tried a recipe and it was good.

Well we had this one with some warm bread and it was really really

good,i'd make it again for definate, the only thing i did different

was i didn't cook the carrots before,i just sliced fresh carrots and

added them, they cooked great and tasted wonderful.

Anywhoooo it was this recipe ..

Vegetable Casserole

2 cups carrots, cut in strips, cooked & drained

2 cups celery, diced

1 onion, diced

1/4 cup green pepper, diced

1 pint tomato juice

4 cups green beans, drained

1 teaspoon salt

dash of pepper

3 tablespoons tapioca

1 tablespoon sugar

Mix all ingredients together in covered casserole or crockpot.

Oven: Dot with 4 tablespoons margarine and bake at 325 for 2 1/2

hours.

Crockpot: Dot with 2 tablespoons margarine and cook on low for 8-10

hour or on high for 4-5 hours.
