Guest guest Posted November 23, 2003 Report Share Posted November 23, 2003 Black Bean Chili A friend gave me this recipe and I've modified it a little so I can use my crockpot. If you prefer your bell peppers crunchy, add them just before the chili finishes cooking. 4 cups onions, chopped, sauted in a little olive oil until golden 4-6 cloves garlic, chopped 1-2 dried chipotles, crushed, or 1-2 jalapenos, chopped 2 cups water or vegetable broth 2 Tbls ground cumin 2 Tbls ground coriander 1 cup salsa 1 16oz bag frozen bell peppers or two large bell peppers, seeded and chopped 4 15oz cans black beans, drained 2 28oz cans diced, stewed or sliced tomatoes w/juice 1 16oz bag frozen corn 2 tsp salt 2 Tbls chipolte Tabasco or jalapeno Tabasco, to taste Place all ingredients except the hot sauce in a 7 quart crockpot. Cook on high for 4-5 hours or low for 8-9 hours. Taste and add hot sauce and additional salt as needed (I add another tsp, but I like my food a little salty). Freezes well.
