Posole

Ok. I made some posole (a southwestern dish) today that was very

good. I'm going to try to recreate the recipe. I'm sure at one time I

had an official recipe with precise measures, but that's lost in the

same black hole some of my socks are in. Generally I'm an

improvisational cook, so you'll also get an improv recipe.

 

Posole

16 oz dried garbanzos

2 14 1/2 oz (411 g) cans no salt added diced tomatoes (or mexican

style...what ever floats your boat)

2 cans golden hominy (I threw about a cup of the " juice " in with the

other stuff)

1 small can tomato paste

sun dried tomatoes (don't know how much...had about 1/2 a bag so I

just threw them in)

olive oil (whatever feels good)

veggie broth (I used Imagine brand...I didn't even add enough to

cover the beans)

garlic (I use a fair amount)

cumin

chili powder

pepper

 

Dump it all in the crockpot stir it up a little. Heat on high for

about an hour or two. Turn to low. I cooked it about 8 hours.

 

Next time I make it, I'll post that recipe, too. Haha
