Wheat Roast recipe...

I cannot imagine any recipe that did not involve the kneading and

washing because that is what washes the starch away from the stingy

gluten and gives you the protein which makes the " roast. "

I do know that there used to be a product from Arrowhead Mills called

" Seitan Quick Mix " that made up a 2 pound (approximately) wheat/gluten

roast that cooked up beautifully and fooled the carnivores. It was much

better than the premade stuff you can buy because you not only could add

your own seasonings but it was cheap. (Not as cheap as making it

yourself from flour but when you consider the cost of labor and water

for rinsing the balance was there.) I don't know if they still make

this. It was vegan and it was WONDERFUL!!!! I miss being able to buy it.

It's still available, and if you can't get it in your area, you can order it

from http://www.healthy-eating.com/gluten_tempeh.html#mixes, along with instant

gluten flour. You can also get it at http://www.dixiediner.com/,

http://www.veganessentials.com/, and

http://www.veganstore.com/cgi-bin/miva?Merchant2/merchant.mv (in case you want

to compare prices).

I used to use the Arrowhead Mills Seitan all the time also. They do not make

it anymore. I now use White Wave Seitan, premade, in 5 lb bags. I buy them, 2

packs in a box for about $35 from the coop I belong to. I have found it's the

closest taste to making it yourself and reasonably priced for pre made.
