According to what I read this makes 14 ounces of Seitan but when cooked it " grows. " I will be mail ordering this. The ingridients look to be the same (I haven't been able to find it for over seven years so my memory could be fuzzy.) I am excited about finding this item again because it was wonderful. I wish I could find it in a local natural food store but our only well stocked one was bought out by Wild Oats about 4 or 5 years ago and the selection has gone to " h*ll in a handbasket, " so if I am going to have Seitan I will have to mail order it. This price is vastly cheaper than getting the premade stuff in the cold case and when one orders in bulk the shipping isn't so bad. I actually found the mix elsewhere in 25 pound bags. So I personally will be buying it that way. There are so many things that you can do with Seitan that it is worth it to find ways to be able to use it without several hours of rinsing and kneading and/or paying the premium cost for about 8 ounces in the cold case. Hopefully other folks who want to try this can find it in their natural foods stores. This will make it easier for the novice to be able to try this item. I just wish Arrowhead Mills was still making it. I found the specs for their package and it had 2x the mix for about the same price. Seitan and gluten make great transitional foods and they are also very hearty for warm winter meals.
