If any concentrate especially on soups, so much the better. Although I really only want specifically crockpot ones, ANY suggestions will be welcome. Thanks!!! Many vegan recipes using tempeh, seitan etc. The recipes that do call for cheese note that you can use soy cheese. Like you said--it's not a " quick and easy " cookbook--it's more " gourmet " . But many of the recipes are wonderful, and not a whole lot of trouble. She does mention soy and nut cheeses a lot, which surprised me since the book is a NON-DAIRY book, and most of these " alternative " cheeses contain casein. That's something to watch for! " It has lots of Cheesy type recipes that contain no casein or animals products at all. They taste wonderful too. I'm not very fond of the soy cheeses from the store anyway as they taste a little " rank " but these cheeses and sauces are simple to make and good. Now she's come out with a new one--the Ultimate Uncheese Cookbook! I just ordered this one from Borders this afternoon. I can't wait to see it!
