I'm actually new to the group - joined last week or so but then work got the better of me so I'm just getting a chance to read through emails. Anyway, I wanted to say that yes - I have the Vegetarian Slow Cooker cookbook. Its pretty neat - vegetarian but definitely not vegan although with many of the recipes you can just play around with and adapt/substitute. It's a small book (dimensions are about 5 inches by 8 inches) Here is the table of contents and some sample recipe titles: - Vegetarian Slow Cooking (good things to know, adapting recipes, time guide) - Main dishes (many bean chili, white bean stew, eggplant parmasean casserole, vegetable stew,italian eggplant with beans, jambalaya,black bean nacho salad, rice gumbo, vegetable currycarrot nut loaf) - Soups (navy bean soup, black bean soup, french onion soup, lentil soup with swiss cheese, spinach potato soup, chipolte corn soup, cream of asperagus soup) - Side dishes (caponata, rosemary creamed onions, mushroom and tomato rice, turnip and onion casserole, braised artichokes, ultimate wild rice) - Cerals and breakfast blends (date cornmeal mush, fruited millet cereal, pumpkin date bread, brown rice with raisins) - Beverages, Sauces and Chutneys (hot fruit punch, russian hot toddy, spiced hot tea, cranberry chutney, raisin chutney, tomato and onion chutney) - Desserts (ginger carrot cake, harvest cake, banana nut cake, carob cheesecake, raspberry peach crisp) - Appendix: Substitutions for meat and dairy products (ricotta substitute, sour cream substitutes, rice milk, nut milk, cream substitute, mayo substitute, mock cream cheese) Its a good little book - I'm not one to really follow recipes to the " t " - usualy drag out a couple, find similar recipes and see what looks good. So I've used this cookbook - mostly for stews and soups and they've been good. Another cookbook that I love to use with my Slow Cooker is called Complete Vegetarian Cooking by Lorna Sass. These recipes are targeted for being cooked in the pressure cooker (which is good fun) but sometimes if I don't want to cook fast, I just use the slow cooker instead and they're terrific too. ok, well, I should introduce myself a bit - I shifted over to vegetarianism about 4 years ago and about a year ago went to veganism.
