Vegan Mac and Cheese

Here's how I makes it:

 

* some Earth Balance (1/4 c at least)

* some nutritional yeast (not too much, maybe 3-4 Tbsp)

* a cup or so of soy milk

* some grated Follow Your Heart cheddar (like 3/4 of a package)

 

Let that saucy son of a gun cook on low until it's cream-a-rific, and

correct it if necesary, mix it with partially cooked elbow noodles,

toss some broccoli or whatever you like in there. Bake it at 350 'til

it's crispy. The results: HOLY COW!

 

Obviously my recipe is not exact, so you may not share my unbelievable

success with a totally made up recipe, but I'm telling you, if you're

willing to go there, just go there.

I've never heard of " Follow your heart " cheddar... where can you

get it???

Follow Your Heart is the BEST vegan cheese around... that is, if you live in

Southern California. They are the makers of Vegenaise, that sells everywhere

as far as I know. You can order it fresh online if you can't find it at a

local store. But the cheeses can be found in some stores, Whole Foods, even

Ralphs.

The FYH mozzarella mixed with tofu and some other ingredients is what I use

as ricotta to make lasagna, which fools my nonvegan family. ;) They also

have a nacho cheese that is Very good. Now I don't have to miss my nachos on

Super Bowl Sunday!

I like that it comes in tubs or sticks for easier measure when using in

recipes.

How long does the Follow Your Heart cheese usually last for you? I

bought some mozerella and in les than a week it had lots of mold on

it. I'm thinking that maybe it was just an older batch?

I've had that happen. You're probably right, maybe it was an older batch

when you purchased it... I have a brick of it right now in my fridge that's

at least 2 weeks old, I've used some so it's been open, and it's still

fresh. I guess it depends. I know that it is not recommended for freezing

like other soy cheeses. It will still taste fine but when thawed the

consistency changes... it gets softer, almost a little runny. (ewww)

Ummm, be careful. I believe the stick variety may be non-vegan. I read the

ingredients when I first saw it... and remember that it

was non-vegan, but I don't remember what was in it that would make

me think that. I've sent an email to them just to be sure.

totally vegan, however, as others have already said,

it can be dicey... can go bad quickly (depending on

how close it is to its expiration date) & i have even

seen them come out of the box moldy after just being

delivered to a friends store. gotta be careful...
