Guest guest Posted January 29, 2004 Report Share Posted January 29, 2004 Here's how I makes it: * some Earth Balance (1/4 c at least) * some nutritional yeast (not too much, maybe 3-4 Tbsp) * a cup or so of soy milk * some grated Follow Your Heart cheddar (like 3/4 of a package) Let that saucy son of a gun cook on low until it's cream-a-rific, and correct it if necesary, mix it with partially cooked elbow noodles, toss some broccoli or whatever you like in there. Bake it at 350 'til it's crispy. The results: HOLY COW! Obviously my recipe is not exact, so you may not share my unbelievable success with a totally made up recipe, but I'm telling you, if you're willing to go there, just go there. They are the makers of Vegenaise, that sells everywhere as far as I know. You can order it fresh online if you can't find it at a local store. But the cheeses can be found in some stores, Whole Foods, even Ralphs. The FYH mozzarella mixed with tofu and some other ingredients is what I use as ricotta to make lasagna, which fools my nonvegan family. They also have a nacho cheese that is Very good. Now I don't have to miss my nachos on Super Bowl Sunday! Hope that helps! I have a brick of it right now in my fridge that's at least 2 weeks old, I've used some so it's been open, and it's still fresh. I guess it depends. I know that it is not recommended for freezing like other soy cheeses. It will still taste fine but when thawed the consistency changes... it gets softer, almost a little runny. I read the ingredients when I first saw it... and remember that it was non-vegan, but I don't remember what was in it that would make me think that. I've sent an email to them just to be sure.
