Cherrie--I've got some " ancient beans " too. I'm going to use them--they look

just fine to me.

does anyone know if dried beans ever go bad or get stale? I ask

because I have several bags of dried beans that I've bought over the

years and never used--should I keep them for future use? or just

throw them out and start over? If I should toss them, how long do

beans last? Sorry, I'm bean-stupid. hehe.

 

ideas?

As far as I know they don`t go bad, but they do go stale. Which means

that they need longer cooking. Sometimes I`ve had stale chickpeas

which have taken forever to cook.

I don't think they ever really go stale, but older ones take longer to

cook. I'd use them unless they look all cruddy.

That is a good question.

 

Over the weekend I cooked up what was left of an open bag of pinto beans that

was 3+ years old probably closer to 4 years old. Anyway they cooked up great,

and with them I made one of the better spicy bean dips that I have tasted. They

looked fine, but at the same time I uncovered some old lentils, and was

wondering about them.
