Older beans will cook up just fine...they may take a little longer to

soften so it is recommended that you soak them two days in the

refrigerator to help them absorb more water (they dry out with the

passage of time) change the water each day and of course use fresh water

to cook them in.

 

Just as a note, wheat found in the pyramids of Egypt still sprouts...I

know that wheat is older than your beans!! ;)
