Hi Kim, This is a raw recipe that I am passing on to you because it uses

beets and I thought it might be good with tofutti sour cream on it. I don't

have a fancy vitamix or anything, I just use my plain old food processor and

it works just fine. Enjoy! -Barbara

Raw Inspiration - 3/13/04 - Cure for Afternoon Blahs

********************************************

I just found a cure for the afternoon blahs!

Take (fresh organic raw everything) three carrots, a beet, an inch chunk of

a

ginger root, a handful of cilantro, a handful of parsley, a clove of garlic

(minus

the core), the juice of a half a lemon, a pinch of salt, a teaspoon of cold

pressed olive oil, and a sprinkling of Italian seasonings (optional) and put

it all

in your Vitamix or Ktec Blender (or other high-powered blender or a food

processor). Hit the buttons. You'll have what looks like a grated

carrot-beet-

slaw. Eat it plain or wrap it in seaweed or greens/lettuces.

Omigod! While others are having their siesta you'll be zinging through your

afternoon with rocketships on your booty!

It'll probably be enough for three days. Its the kind of thing that tastes

even

better the next day. (You could pack it! as a lunch too).
