Oh my gosh, Ardee-ann! Thanks for the party!!! :D As a matter of fact, I'm

drinking some solar tea as I'm typing this! Just made it this morning. Your

recipes sound YUMMY! Those beans must smell so good in the slow cooker!!!

I don't know where you live but here in Arkansas is almost

summertime...no...I am not kidding...things that bloom in June are now

blooming...so what yummy feast should we prepare to celebrate your

return....

 

How about picnic fare? Baked beans, potato salad and totally raw cole

slaw...along with lemonade and iced tea!

 

The beans can be our vegan crockpot recipe: (does everyone remember I

don't use real recipes?)

 

Cooked beans...navy or pea, add garlic, salt and pepper, chopped onion

and bell pepper, catsup, mustard and a bit of sweetener(I like using a

small can of crushed pineapple.) Cook over night on low. Cook it down

thick!

 

Potato Salad -- (If you are diabetic you can substitute steamed

cauliflower) Cooked potatoes chopped up, chopped celery, chopped onion,

bell pepper, chopped pickle (some like sweet...I like dill), and the

dressing...blend a block of silken tofu with salt, pepper, mustard and

garlic. Stir into the other ingredients.

 

Totally raw slaw -- in food processor totally mince a head of cabbage, a

bell pepper, a red onion, two or three carrots, a peeled lemon, three or

four stalks of celery, one date...add salt, pepper and garlic (notice a

theme here) and then when you are finished processing pour a bit of

olive oil in the veggie mix...stir well.

 

Ok, while the cooking is going on we can make some solar tea...and

homemade lemonade...to celebrate your return to the world of e-lists,

cyberpals and veggie cuisine.
