Both my boyfriend and I hate grocery shopping and as a result we often only have these ingrediants from which to produce dinner: onion, garlic, tofu, soy sauce, dry spices....we often have cans of beans and bags of rice. But we haven't figured out yet how to make a non-boring dinner from those ingrediants. Obviously, ideally we would have other food, but this just happens so much in our house that I thought I'd ask if anyone had any recipes or ideas for some of those basic ingrediants. Thanks! If you throw in a bag of carrots (which keep for a while!) and a bag of frozen corn, you can make this stew. it tastes kinda like chicken stew, but just because there is poulty seasoning in it. Sorry if I've posted this before, i can't remember! Carrie's Lentil Stew 1 can lentils drained and rinced (brown, green, whatever they are, just not red) 3 medium potatoes, cut into 1-inch chunks 2 medium carrots, sliced 1 cup frozen corn 1 medium onion, chopped semi-finely 3 tbsp dried parsley 3 tbsp poulty seasoning 1 tbsp prepard mustard 1 tsp soy sauce 1 clove garlic (if you want - just lightly sautée it first!) 1 tbsp flour 3 tbsp water salt and pepper to taste 1) Boil carrots and potatoes until almost done (they're pretty soft, but you would give them 5 more minutes before serving) 2) Add onion to carrots and potatoes, cook for two minutes or until onion is soft.Reduce heat to a heavy simmer. 3) Add lentils and frozen corn, adding more water if necessary to keep a thick soup-like consistancy. 4) Add poulty seasoning, parsley, mustard, soy sauce, (garlic), salt and pepper. Let simmer for 5 minutes. 5) Meanwhile, combine flour and water in a seperate container - shake until you have a very runny paste-like consistancy. 6) SLOWLY add this to the lentil mixture, stirring slowly and constantly. 7) Let this simmer 10 minutes or more, thickening (with more flour and water) or thinning if so desired. Serve piping hot. * I don't measure anything, these are all approximate measurements (the spices especially!). So taste it after step 7, add what you want! You can also throw in more frozen veggies, or pre-cooked chicken to satisfy those who still eat meat in your families! Hope that helps your menu ideas! Some responses to the topic have really bothered me; have some of us lost our compassion for other humans? To be concerned and be an activist for animal rights is all well and good, in fact, it is to be applauded. But to make people feel bad because your own situation makes it easy for you to not support omnivorous businesses is uncalled for, and, yes, is much too " harsh. " If you live in NY or CA, you have it easy! There are restaurants and grocery stores that cater to your wishes and you have _options_. It is simple to say that you will only patronize those businesses-- because they are there!! But when you make other people feel small because they would like a little convenience in their hectic lives, in places where veggies are an almost 0% of the population, that is uncalled for. We in Iowa, Minnesota, Wisconsin, etc. do the best we can. We live in a subculture where not eating meat every meal is unheard of! We deal with strange stares, nutcase comments, things that mak it hard on us every meal. Going to school, gonna take some mushroom risotto for lunch that you made last night? Well, if you do, prepare to be the talk of the whole rest of the lunch table-- because no one else brings their lunch, unless it's fast food. There are no meat-free meals in the cafeteria, either. Going to work? There are no meat-free businesses that hire 16-year-olds in Iowa. How about family? Very few of us even know other vegetarians, let alone have them in the same family! I know that many others who don't live in these areas have these problems too. Not everyone has options to do what they'd like and not patronize these businesses. We do what we can, and for some that is a monumental task! So here's to the converted: every single person who struggles to not kill animals for food. To every person who drives 300 miles to find a store that carries the food they need-- and pays extra for it. To every person who stays home rather than go to non-veggie restaurants with friends or family. To every person who goes to school and to work and to family gatherings and faces the ridicule so prevalent for different people. And here's to the person who goes home after a 12 hour day at work to cook because they can't get any meat-free fastfood. You are all wonderful beautiful people, and when it gets hard, remember that I admire you for it. So does every other vegetarian, vegan, and animal. You can buy pre-mixed poultry seasoning from the grocery store, I actually found mine in a dollar store. It's a mixture of thyme, sage, marjoram, black pepper and nutmeg, in that order (on the label, anyway!) but I don't know the proportions. It's the same kinds of seasonings you'd throw in stuffing.
