Oh hey! I'm new! So here I am:

 

My name is Tory and I'm a high school teacher in Washington state. I am

married to my high school sweetheart and teach at the high school we

graduated from. (How many times did I tell myself I couldn't wait to get out

of this town? Haha!) Anyhow, I teach five classes right now:

 

Introduction to Computer Science

Advanced Computers in Business

Keyboarding

Microsoft Network Administration I

Advanced Microsoft Network Administration

 

I am also working with another teacher on implementing an A+ Computer

Maintenance and Repair year long course for next year.

 

So you could say I'm a geek.

 

I have no children, not by choice. I've been an on again off again

vegetarian for a few years, and have re-dedicated myself for health reasons

starting the beginning of this year. My husband agreed to no meat for four

months and then once a month after that. Actually, he agreed to once a week

after that, but I've convinced him to go once a month. That's quite the

coup! He is first generation American from a Norwegien family where meat has

always been the main focus of the meal. I know it's not easy for him, but he

loves me so he does it.

 

Hmmmm...what else? We're both currently working on our Masters in Education

so we're really busy! In addition, I am taking my MCSE courses which means I

may have classes up to four evenings a week (since along with my tech

students, I also teach a beginning computer class at night). I'm always

looking for good, tastey meals that would be easy to create, healthy, and

easy to take with me as leftovers.

Layered Vegetarian Dinner

 

6 potatoes -- sliced

1 large onion -- sliced

2 carrots -- sliced

1 green pepper -- sliced

1 zucchini -- sliced

1 cup corn -- frozen or fresh

1 cup peas -- frozen or fresh

Any other favorite veggies

 

Sauce

 

2 1/2 cups tomato sauce

1/4 cup Tamari soy sauce -- low-sodium

1 tsp thyme -- ground

1 tsp dry mustard

1 tsp basil

2 tsp chili powder

1/2 tsp cinnamon

1/8 tsp sage

2 Tbs parsley

 

Layer vegetables in crock pot in order given.

Mix together ingredients for sauce and pour over

vegetables. Cook six hours on high or 12 hours on low.
