Now I use gluten powder, so all you do is take a cup of water, then add a cup of gluten powder, sprinkling it in while you stir with your other hand. It just magically turns into gluten Then I boil it for 30 mins or so. The texture is affected by whether you boil or simmer apparently, although I can`t say I`ve noticed. Anyway you can also flavour by adding stuff to the powder when you mix with water and also by boiling in a nice tasty veggie stock or something. Seitan can be marinated with great results and so, as I recently discovered, can frozen and defrosted tofu. I can recommend http://vegweb.com for zillions of seitan recipes but nothing specifically for crockpot, unfortunately.
