ok, well, there are several different kinds of seitan out there, you kind of

have to play around with all the different types and see what kinds you

like...it is trial and error, but you don't have to enjoy it either...happy

cooking!

Thanks!!! It is just GREAT to know that it can be made so easily with

gluten flour!!
