My apologies for not remembering who posted this, but we tried it last night

and we really liked it! We've never had real sloppy joes, so can't compar,

but thought it was tasty served on open-faced buns. I assembled the entire

dish the night before and stuck it in the fridge, so did not do the first

step of cooking the lentils for 10 minutes. I figured the soaking overnight

would make up for that. I cooked it on low for 11 hours. I think 10 hours

would have been plenty in my hot Rival. Thanks to whomever posted it!! -

BBQ Veggie Joes (Pillsbury)

Amount Measure Ingredient -- Preparation Method

1 cup dried lentils -- rinsed, sorted

2 cups water

1 1/2 cups chopped celery

1 1/2 cups chopped carrots

1 cup chopped onions

3/4 cup ketchup

2 tablespoons dark brown sugar

2 tablespoons worcestershire sauce

2 tablespoons cider vinegar

10 sesame seed buns -- split, toasted

 

In medium saucepan, combine lentils and water. Bring to a boil. Reduce

heat; cover and simmer 10 minutes.

 

In 3 1/2 to 4-quart slow cooker, combine celery, carrots, onions,

ketchup, brown sugar, Worcestershire sauce and lentils with water; mix

well.

 

Cover; cook on low setting for 10 to 12 hours.

 

Just before serving, stir in vinegar. Spoon 1/2 cup filling into each

toasted bun.

Ingredient Info: Popular in the Middle East and India, lentils come in

three varieties. Brown European lentils are most common in our grocery

stores, but Egyptian red lentils and yellow lentils can also be used in

these sandwiches. All lentils taste similar, but the colorful ones give

the sandwiches an attractive touch.

 

Healthy Hint: Lentils are an inexpensive protein source; they are high

in fiber, complex carbohydrates, and B vitamins.

 

Kitchen Tip: Use a food processor to make quick work of chopping the

vegetables for these Veggie Joes. Two carrots, two stalks of celery and

two medium onions yield the measured amounts.
