Alta Mae's Many Bean Stew

Alta Mae's Many Bean Stew

6 servings

 

1 md Onion, chopped

1 md Garlic clove

1 1/2 ts Paprika

2 c Vegetables, cubed

1/2 c Pinto beans

1/2 c Kidney beans

1/2 c Lima beans

1/2 c Yellow split peas

2 ts Salt

5 c Boiling water

Bay leaf

1 ts Celery seed

1 ts Dill weed

1/4 ts Pepper

Saute onion and garlic in water with paprika.If you have a

crockpot,put all the ingredients in and cook on High for 8 hours. If

not, add pintos, water, bay leaf,and celery seed and bring to a

boil.

Simmer, partially covered, for 1 hour. Add kidney beans and lima

beans and simmer another hour. Add remaining ingredients. Check and

stir occasionally to make sure there's enough water. Simmer another

hour.

Are these canned beans or dry?

Judging from how long the cooking time is, I'd say canned.

so, here is another question from someone who used to know the answer & have

forgotten :^ ( How does one make beans so that one is not gaseous

afterwards??

Hi,

The way I do it is this: Use fresh water when cooking the beans - not the same

water they were soaked in. Rinse them several times AFTER soaking them and

before cooking them. Put one small to medium sized RAW potato in the pot when

cooking the beans. The potato absorbs the troublesome gases. Compost or throw

the potato away after the beans are cooked (just don't eat it or your whole

purpose will be defeated). Some people I know who have tried this method swear

by it (myself included). A few say it doesn't work for them. I guess there's

no way to know until you try it. Good Luck.

In my Mastercook copy of this recipe, I have these as dried beans.
