Guest guest Posted October 25, 2004 Report Share Posted October 25, 2004 I forgot to check to see if Boca sausages are Vegan, so substitute your preferred brand if they are not. Crockpot Veggie Sausage & Bean soup 1 yellow onion, diced 1 tsp olive oil 3 cloves garlic, minced 1 can garbanzo beans, drained 1 4oz can diced green chilies, drained 1 can diced basil & oregano tomatoes, drained (I used Del Monte) 1 cup vegetable stock 3 cups cooked brown rice 3 Boca sausages, thawed and sliced (about 7-8 ounces) 4 oz light or fat free cream cheese, or veggie cream cheese ½ tsp salt ½ tsp black pepper Heat olive oil in a sauté pan. Cook the diced onion with cover until soft, about 5 minutes. Add minced garlic and stir. Add to crockpot with garbanzo beans, green chilies, tomatoes, vegetable stock, salt and pepper (or more to taste). Cook on low for 4-6 hours. Add 3 cups cooked brown rice and sausage to crockpot 20-40 minutes before serving. Stir well. Also add cream cheese, but just set on top of ingredients in crockpot to get warm. When ready to serve, stir in cream cheese. Serve in soup bowls. This is a thick soup, more like chili. For a thinner soup, do not drain excess liquids from chilies or diced tomatoes, and add ½ cup more vegetable stock. Serves 4 generously. _______________ Express yourself instantly with MSN Messenger! I was thinking of doing 2 cans next time, to increase the vegetable content of this dish. I would recommend petite diced tomatoes instead of huge chunks. Hope this helps!
