The Moosewood recipe for mushroom/barley soup is really good. It

should be easy enough to adapt to a crockpot. In fact, I think I've

made it in the crockpot, although it's been years.... To make the

recipe vegan, of course, substitute vegan margarine or vegetable oil

for the butter:
