I'm guessing at least 5 hours on low, depending on the size of the cut veggies (the smaller the cut, the less the total cooking time). Good customizable recipe. I don't usually say how many people a recipe serves because it depends on *how* and to *whom* it is to be served. Before a meal, for example, to a hungry adolescent or to a normal human, for eg? Likewise if it is to be a meal in a bowl. You got it. I cook around 3 hrs on high - on in the morning, ready for lunch, or on in the late afternoon, ready for dinnertime. But it depends on the cut, of course, as you say, which is why one can't say exactly. I think I specified a * small* cut - cutting the celery lengthways first suggests small and so does putting the beans into 1/3 inch rounds - or did I leave that out of the recipe? Sorry. (Nope, it's all there.) And some think it depends on the brand of slow cooker gizmo you're using - setting differ a little they say. Siggghhhhh. Tell ya what.
