epazote cuts gas in beans.

I've grown epazote in my garden here in Vancouver BC for years. I originally got

the seed from West Coast Seeds www.westcoastseeds.com . The original plant set

seed and since then I've had plenty of volunteers every spring. On occasion

plants have even survived our cool wet winters. The fresh leaves loose their

kerosene like odour when cooked. I harvest and clean the leaves, chop them in my

food processer then freeze in tablespoon portions in ice cube trays filled with

water or stock. This makes it very easy to add to cooking and preserves the

flavour of the fresh herb.

Hi Donna,

This herb works wonders. Don't let anyone try to say it has a bad taste or

it's dangerous or any of that. I spent a lot of time with the Mayan Indians of

Yucatan, Mexico and they have used it for centuries in their staple diet of

black beans and white rice. Feel free to write me on my email address. I'm in

southern Calif and I will also try to see if there's a place for you to buy

seeds, etc. I have used it for 20 yrs or more and it really works. I only have

a small patio so I can't always keep it growing when needed and the konbu seems

to work for me but I prefer the epazote. Once you get a little spring in your

ground it will take off and grow fast into a hearty attractive bush....enjoy

your day, it's pouring here. Donna

Hi Craig,

I do the same thing with the plant. How much do you add to a crockpot of beans?

I use about 3 leaves. The Mayans I've cooked with use about 15 leaves per pot.

It sure works. Not a hard plant to grow at all and it survives with little or

no water. My sister will forget to water her plants for 1-2 months and they are

healthy.

Hi Donna,

I use about 1 tablespoon of finely chopped leaves for every 2 cups of dried

beans. I like to add the epazote after the beans have softened somewhat rather

than right at the beginning so that the flavour doesn't disappear.
