Guest guest Posted April 28, 2005 Report Share Posted April 28, 2005 [Forwarded message from new member who is looking to veganize her lasagna recipe.] I'm new here and my husband and I are wanting to cut down/out meat. We found this lasagna crook pot recipe and love it but was wondering if any one knew of something we could do instead to make it healthier? the last time i made it and used half brown rice and half meet instead of the full meat it said and I used less cheese and it calls for cottage cheese instead of ricotta So what are some things I could do to this? The slow cooker we have is perfect for making lasagna because we can layer the noodles. Any ideas? I don't care for soy replacements because I have a thyroid problem and I can't tolerate much soy. I don't mind things in it like broccolie or zuchinni but have to be careful because they tend to make it runny. Thanks for any ideas. I recommend the organic variety, if you can find it, because most non-organic soy is genetically modified. Unfortunately, as stated, she can't take much soy. But your suggestion is a good one - it's great how so many recipes can be adapted to vegan with all the wonderful things that are so readily available. I too, like you, use the organic variety of TVP - love the chunks in stews (especially good for the crockpot) and 'meal' soups and the tiny bits for things like lasagna. Do you cook noodles in the crockpot? It's something I haven't tried because I fear they would become mushy and there's nothing sadder than an overcooked noodle LOL Suggestiions as to how to avoid that??? Guest guest Posted April 28, 2005 Report Share Posted April 28, 2005 Hello. Since you mentioned not wanting to use soy how about cheese, cream cheese, etc. made from rice milk? There's a mozzarella cheese, not quite Vegan (derivatives) but close, made from rice milk made by Soyco that I & my husband like a lot. It's almost indistinguishable from dairy mozzarella cheese. You should be able to get it at most health food stores. They also make cream cheese, parmesan cheese & sour cream but I haven't tried them as I like the Vegan Tofutti (soy) sour cream and cream cheese and am not much for parmesan. Of course as far as the meat you could try meat substitutes. I don't know for sure but imagine there's one somewhere made from wheat gluten instead of soy. You could also try adding wheat berries for something chewy though they won't taste like meat. You soak the wheat and I forget for how many hours, than run it through the meat grinder and than add the seasonings. I like that better than wheat gluten (the stuff they call meat replacement)because it seems healthier than rinsing away all the stuff plus I think it's less time consumming. I would love to figure out how to make excellent low glycemic noodles. The only ones on the market now are Atkins crap, and even those are happily disappearing.. It would be great if there was also, of course, a crockpot-friendly variety. I just got a food drier, and intend to try some experimenting. We are going through our y2k supplies, and we have lots of split peas and lentils. I have been cooking batches of them with half as much water,, for 9-10 hrs. on low. The split peas cook into a nice dal, and the lentils get an incredible flavor. My son ate a spoonful and shrieked. I thought he had burned himself. But he was just gasping at how good the lentils tasted. It was funny, because his dad makes him wonderfully creative and healthy food that he puts a lot of effort into. L says nothing, and just quietly eats the food. I throw together a simple pot of lentils with kombu and red pepper flakes, and he gasps! Crockpots are wonderful. Guest guest Posted April 29, 2005 Report Share Posted April 29, 2005 Diane, You get the cracked wheat at the store - normally a health food store and just cook it with the sauce. If you are using pre-cooked sauce (i.e. Newman's, Classico) for lasagna, you need to add a bit more liquid as the cracked wheat absorbs liquid as it cooks. The same goes for chili or anything you cook the cracked wheat with. Seitan (pronounced say TAHN) is wheat meat so if you have a recipe for the wheat meat, you have one for seitan too.
