Guest guest Posted April 29, 2005 Report Share Posted April 29, 2005 I have a house full of wheat and a grinder so I don't want to buy cracked wheat. So How do you get cracked wheat out of whole wheat? I'm used to using whole wheat flour for bread but that seems to be pretty fine. I have the whisper mill. Do I need to put it on a different setting or do you need a special thing for doing cracked wheat? I know for oat groats you have to have a special oat roller to use with them to get oats. I'm a little confused on seitan though. I thought seitan was the stuff you get when you take wheat flour and wash everything away? The wheat meat I learned about was taking whole wheat kernals, soaking for so many hours (think it's 18 or 24?) than drain and run through the meat grinder, add seasoning and it's suppose to come out like ground meat than you make patties, or through it in a dish when a recipe calls for ground beef. If you are using pre-cooked sauce (i.e. Newman's, Classico) for lasagna, you need to add a bit more liquid as the cracked wheat absorbs liquid as it cooks. Guest guest Posted April 29, 2005 Report Share Posted April 29, 2005 Diane, Cracked wheat is made from wheat berries. From what I understand, bulgur is a more processed form of cracked wheat.
