Guest guest Posted June 1, 2005 Report Share Posted June 1, 2005 modified from a recipe posted to crockpot_recipes by beavertis Crockpot Vegetable Minestrone 12 servings 4 cups vegetable broth 4 cups tomato juice 1 TBSP dried basil leaves 1 tsp salt 1/2 tsp dried oregano leaves 1/4 tsp pepper 2 medium carrots, sliced (1 cup) 2 medium stalks celery, chopped (1 cup) 1 medium onion, chopped (1/2 cup) 1 cup sliced mushrooms 2 cloves garlic, finely chopped 1 can (28 ounces) diced tomatoes, undrained 1 1/2 cups uncooked rotini pasta Mix all ingredients except pasta in 4 - 5 quart slow cooker. Cover & cook on low for 7-8 hours or until vegetables are tender. Stir in pasta.
