Guest guest Posted June 6, 2005 Report Share Posted June 6, 2005 adapted from the crockpot-recipe list Apple Brown Betty Categories: Crockpot, Desserts, Fruits Yield: 4 servings 4 c Small bread cubes (1/2 " ) 1/2 c margarine, melted 1/2 ts Cinnamon 1/4 ts Nutmeg 1/8 ts Salt 3/4 c Brown sugar, firmly packed 4 c Cooking apples, peeled,chopped Mix bread cubes with margarine, cinnamon, nutmeg, salt and brown sugar. Arrange in alternate layers with apples in crockpot. Cover and cook on high for 1 1/2 to 2 1/2 hours or until apples are tender. Serve warm with hard sauce or vegan ice cream. Makes 4 to 5 servings. I can remember my Dad standing for what seemed like an hour stirring it over low heat(sipping on a bit of brandy helped to pass the time!) . It was poured over plum pudding at Christmas time, then used on fruit cake after the pudding was eaten. INGREDIENTS: a.. 1 cup vegan margarine, softened b.. 1 cup vegan confectioners' sugar* c.. 1/4 cup dark rum d.. 1 teaspoon vanilla extract e.. 1/4 teaspoon ground nutmeg *Hains makes a commercial brand vegan confectioners sugar OR you can find a good recipe at www.veganchef.com -------- DIRECTIONS: 1.. Beat vegan margarine until light and fluffy, about 2 minutes. Sift vegan confectioners' sugar into the margarine. Add rum, vanilla, and nutmeg. Beat on high speed for 5 minutes.
