I used to use them in an ovo-lacto lasagna dish back when I ate that stuff. I'm sure you could adapt them to that use with a vegan recipe very easily. The vegan ricotta would be mixed with pureed squash and layered with the onions and broccoli flowerets, if you get the idea. Tasty and different.
