" ~~~~~~~~~~~~~~ * Exported from MasterCook * Sweet and Spicy Garbanzo Stew Recipe By :John McDougall, MD and Mary McDougall Serving Size : 8 Preparation Time :0:20 Categories : Beans & Legumes Crockpot Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup garbanzo beans -- dry, *see note 7 cups water 1 onion -- coarsely chopped 2 sweet potato -- peeled and chopped 1 carrot -- peeled and sliced 1 stalk celery -- sliced 1 leek -- trimmed and sliced 2 cups broccoli florets 1 tablespoon lemon juice 1 tablespoon soy sauce, low sodium 1 teaspoon ground coriander 1/2 teaspoon ground cumin 2 teaspoons horseradish -- prepared 1/8 teaspoon tabasco sauce 1 dash cayenne -- to taste, optional Place the beans and enough water to cover them in a large pot and soak overnight. Drain. Add the 7 cups of water, bring to a boil, cover, reduce heat, and cook until tender, about 2-3 hours. Add the onion, potatoes, carrot, celery, and leek, and cook for 30 minutes. Add the broccoli and seasonings and cook for another 30 minutes. This can easily be made in a slow-cooker. Add all the ingredients at once (after the beans have soaked overnight) and cook on High heat setting for 8-10 hours.
